Sushi Chef

Department: Back of House

Reports to: Executive Chef

Salary: $23/hour

Status: Full-time and Part-Time, Non-Exempt

Location: Okane, 669 Townsend Street, San Francisco, CA 94103

Job Summary

The Lead Server is responsible for consistently delivering strong service results. This position ensures the restaurant is properly staffed, employees are on task, and that the restaurant is well organized, stocked, and cleaned. This position is also responsible for the business operating smoothly during the assigned shift. In this role, the Lead Server will partner with other members of management to keep the work environment safe and compliant with all relevant laws and regulations.

Primary Duties and Responsibilities

  • Expertly cut, slice, and filet different types of fish.
  • Inspect the quality of fruit, vegetables, and fish used to prepare sushi dishes and inform Executive Chef when quality is sub-standard.
  • Prepare various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Maintain a clean work environment in order to prevent food contamination.
  • Sterilize all utensils, instruments, and equipment used in sushi preparation before every use.
  • Communicate with Front of House to ensure that special requests and food allergy considerations are met.

Qualifications

Minimum Requirements

  • At least 2 years of Japanese and sushi related experience in an upscale setting.
  • Proficient in Omakase / Sushi.
  • Associates Degree in Culinary Arts or American Culinary Federation (ACF) certification is preferred.
  • Strong knowledge of food safety regulations.
  • The ability to stand for long periods of time.
  • Excellent time-management skills.
  • Exceptional customer service skills.
  • The ability to work under pressure.

Prerequisites for Employment

  • Valid manager level California ServSafe Food Handler Certification

The Sushi Chef must be able to lift and/or move up to 50 pounds, be able to work in a standing position for long periods of time.
